How does Asprin work? (Acetylsalicylic acid)
Aspirin binds covalent to an enzyme
it blocks its activity to produce prostaglandin, which causes the symptoms
possible through ester group: breaks off the molecule and sticks in the enzyme => lock-and-key-function
PRESERVING Food
maintaingn or creating nutritional value, texture, flavor
methods to kill bacteria and to create poor environments for bacterial growth
temp. cooling, freezing, boiling
dehydrative conditions: drying, salting, curing, sugaring
acidic conditions: pickling, canning
anaerobic state - burying
host micro-organisms: fermenting
Antimicrobials
chemical preservative
inhibit growth of bacteria, yeast, mold
e.g. sulfites, benzoates, parabens, nitrates, sorbates
Antioxidants
slow oxidation of fats, preventing rancidity
hydroxytoluene, hydroxyquinone
block natural ripening and enzymatic processes that continue in food stuffs after harvest
Vitamin C, EDTA, citric acid
